Monkey Bread

Great for satisfying that cinnamon roll/sticky bun craving, but a whole lot easier to make.

2 cans refrigerator biscuits
1/2 cup sugar
2 tablespoons cinnamon
1 stick butter or margarine
1 cup brown sugar

Cut each biscuit into four pieces. Place the pieces in a bag with the 1/2 cup of sugar and 2 T cinnamon. Shake bag to coat. Combine brown sugar and butter/margarine in sauce pan and cook to boiling stirring constantly for two minutes. Place coated biscuit pieces in greased bundt pan and sprinkle remaining sugar & cinnamon mixture from bag over pieces. Pour brown sugar mixture over biscuits and bake at 350 for 30 - 35 minutes. Dump on serving plate to cool.

Best Ever Banana Nut Bread

One thing we have found on the road is that bananas ripen too fast, so rather than tossing overripe bananas out, I use them for this recipe. I've learned in all my years of baking that recipes calling for buttermilk are usually delicious, and this one is no exception.

I also like to make this recipe in mini-loaf pans and share the small loaves with other campers.

2 - 3 ripened mashed bananas
2 eggs
1 3/4 cup flour
1 1/2 cup sugar
1/2 cup buttermilk (I use powdered buttermilk - better for RVing)
1/2 cup vegetable oil
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup chopped walnuts (optional)

Mix all ingredients together. Pour into greased loaf pans (two medium or a medium and two minis). Bake at 350 for 50 - 60 minutes or until testing toothpick comes out dry. Cool in pans 5 minutes and turn onto cooling rack until completely cooled.

Laura O'Sofamous Apple Bread

We got this recipe from one of our website visitors that came to meet us in Gulf Shores, AL in October 2005. Her name is Laura and her last name begins with "O," so we named this one after her. Not only is it delicious, but the aroma coming from your rig will draw a crowd! :)

Sugar Mixture:
1/2 cup shortening
1 cup sugar
1 teaspoon vanilla
2 eggs, beaten

Dry Mixture:
2 cups flour
1 teaspoon baking soda

Liquid Mixture:
1/2 cup milk
1 teaspoon vinegar

2 cups apples, cooked, peeled, & sliced

Topping Mixture:
1/4 cup flour
1/4 cup butter, melted
3 tablespoons brown sugar
1 1/2 teaspoons cinammon

In a large bowl, cream shortening and sugar. Add vanilla and eggs.

In a small bowl, combine flour and baking soda.

In a liquid measuring cup, combine milk & vinegar.

Alternately, add Dry Mixture & Liquid Mixture to Sugar Mixture. Stir in apples. Pour into large greased loaf pan.

Prepare topping. Combine topping ingredients and form into small balls. Drop balls into batter.

Bake at 350 for 1 hour 15 minutes or until toothpick inserted comes out clean. Cool in pan for ten minutes.

Karen's Healthy Choice Oatmeal Raisin Muffins

This is a very healthy muffin recipe that I got from my sister, Karen. There is no sugar and no flour. The raisins make them naturally sweet and they are a good source of fiber.

1 cup rolled oats
2/3 cup powdered milk
2 eggs
3/4 cup unsweetened apple sauce
1/2 teaspoon baking powder
1 1/2 tablespoons cinnamon
1 1/2 cups raisins

Stir all ingredients together. Pour into greased muffin pan. Fill to 3/4 full. Bake at 350 for 30 minutes. Makes 6 - 8 muffins.
